To create a menu that reflects New Zealand’s national identity to the world is no easy feat. Wellington’s premier caterer Ruth Pretty was set the challenging task for both Expo 2005 in Aichi, Japan and Expo 2010 in Shanghai, China.
Ruth’s approach to showcase the best of New Zealand food at both Expos was to focus on product, quality and strong flavours. And doing what New Zealanders do best - keeping it simple and unique.
By creating tailored menus for an assorted number of guests from clients, stakeholders and governmental diplomats, Ruth collaborated with chefs to fuse Japanese and Chinese cuisine with New Zealand classics at each Expo.
The end results were a number of meals that resonated with the culinary tastes of the host country while maintaining authentic New Zealand flavours.
